How to: Make the Queen’s favourite cake

It might be because we’ve worked with Buckingham Palace recently on designing on Platinum Jubilee collection, but we’ve got the inside track on Her Majesty’s favourite cake - the Chocolate Biscuit Cake.

It was also the cake Prince William and Catherine had at their wedding in 2011, so it really must be a family favourite! We’ve pulled together the recipe for you, so you too can eat like a Queen. Why not make it for your Jubilee street party?

ingredients

  • - ½ teaspoon butter, for greasing the pan
  • - 8oz Rich Tea biscuits
  • - 4oz unsalted butter, softened
  • - 4oz granulated sugar
  • - 4oz dark chocolate
  • - 1 egg
  • - 8oz dark chocolate, for coating
  • - 1oz chocolate, for decoration

Method:
Step 1 - Lightly grease a cake tin with butter and place on a baking tray. We used a rectangular one to make it a ‘tray bake’

Step 2 - Break each of the biscuits into small pieces, around 2-3cm, and set aside

Step 3 - In a large bowl, combine the butter and sugar until the mixture starts to lighten

Step 4 - Melt the 4oz of dark chocolate and add to the butter and sugar mixture, stirring constantly

Step 5 - Add the egg, and beat to combine

Step 6 - Fold in the biscuit pieces until they are all coated with the chocolate mixture

Step 7 - Spoon the mixture into the prepared cake ring, making sure you fill all the gaps in the bottom

Step 8 - Chill the cake in the fridge for at least 3 hours
Step 9 - Remove the cake from the fridge, and allow it to stand

Step 10 - Meanwhile, melt the 8oz of dark chocolate in a bain marie

Step 11 - Ease a knife around the edge of the cake to release it from the tin, and turn it upside down onto a cake wire

Step 12 - Pour the melted chocolate over the cake and smooth over using a flat knife or spatula

Step 13 - Allow the chocolate to set at room temperature

Step 14 - Carefully remove the cake from the cake wire once the chocolate has set (you made need to use a knife to separate where it has stuck) and transfer to a plate

Step 15 - Melt the remaining 1oz of chocolate for a final decoration

Step 16 - Enjoy with a cup of tea!
